Tempty Foods is building a new category of foods powered by mycelium. The company develops tasty, versatile, and sustainable food products that bring fungi-based ingredients into everyday eating occasions, offering consumers an alternative to conventional protein sources without compromising on experience.

Already selling across Denmark through retailers and foodservice partners including Coop, Halifax, and 7-Eleven, Tempty Foods is now scaling internationally with a launch in 7-Eleven Sweden. The company recently raised €700k in seed funding to support this expansion and is also opening the journey to the wider community through an equity crowdfunding campaign on Republic.

👩🏽 About the Founder:

Martina Lokajova is the Co-Founder and CEO of Tempty Foods. She leads the company alongside her two female co-founders, forming a fully female-led and founded team. The three co-founders met at DTU in Denmark and have built Tempty Foods from a university-rooted food innovation project into a commercially active FoodTech company now expanding beyond Denmark.

Tempty Foods sits at the intersection of FoodTech, sustainable protein, and consumer behaviour change. With existing retail traction in Denmark, an international launch through 7-Eleven Sweden, and fresh seed funding to support expansion, the company is moving beyond R&D into commercial scale. OnMune is a precision medicine startup building AI-driven patient immune-digital twins to accelerate evidence-based drug repurposing in oncology and immune-mediated diseases. The platform integrates clinical, molecular, and real-world data into a unified representation of each patient to support more personalised, faster, and cost-effective treatment decisions.

Using advanced machine learning and systems biology, OnMune helps identify repurposable drugs and rational combinations tailored to individual disease biology, with the goal of improving outcomes while reducing development time and cost. The company collaborates with clinicians, hospitals, and industry partners to validate its approach in real-world settings and bridge the gap between algorithmic predictions and clinical utility.

👩🏽 About the Founder:

Nikolina Giotopoulou is a biomedical scientist and entrepreneur specialising in immuno-oncology. Before founding OnMune, she spent two years as an independent research consultant and previously served as Senior Scientific Associate at intelligencia.ai, an AI-driven drug development company.

Earlier in her career, she completed a five-year PhD in Medical Science and Immuno-Oncology at Karolinska Institutet and held a Research Fellowship at Pfizer. She also worked as a Research Fellow at the Centre for Research and Technology Hellas and as a Research Scientist at Karolinska University Hospital. She holds a PhD in Immuno-Oncology and an MSc in Biomedicine from Karolinska Institutet, as well as a five-year integrated degree in Biological Applications and Technologies from the University of Ioannina.

OnMune targets the fast-growing drug repurposing market, estimated to exceed $40 billion by 2030, with a scientifically differentiated approach using immune-digital twins. Nikolina’s 15+ years across Pfizer, Karolinska Institutet, and AI-driven drug discovery give her the rare combination of wet-lab credibility, computational depth, and commercial exposure needed to translate this technology into clinical and pharmaceutical partnerships.

Nany is an AI personal assistant designed to handle the family admin and mental load that falls on parents. From school forms and doctor appointments to the endless invisible to-do lists that pile up at home, Nany takes care of the operational complexity of running a family so parents can focus on what matters.

The company is building towards a world where every parent, not just those who can afford human help, has access to a genuinely capable personal assistant. Its private beta is live, with a public launch forthcoming.

👩🏽 About the Founder:

Wendy Teboul is a data scientist and software leader turned founder. Before Nany, she spent five years at LittleBigCode, rising from Data Science Consultant to Team Leader for Data and AI consulting.

Earlier, she worked as a Data Scientist at Aetna, a CVS Health company, and at Cherre, a real estate data intelligence platform. She also completed an internship in Big Data Analytics at Infosys. She holds an MSc in Operations Research from Columbia University and a Master of Engineering in Electrical Engineering and Computer Science from CentraleSupélec.

🔓 Investor Lens:

Nany is attacking the family mental-load problem, a market with hundreds of millions of stressed parents globally who are desperate for intelligent automation. Wendy’s background in data science, her hands-on experience shipping production AI systems for enterprise clients, and her Columbia and CentraleSupélec pedigree make her one of the most technically credible founders working on this underserved consumer AI opportunity.

SovCore is the first Sovereign-by-Design Virtual Data Room purpose-built for European law firms and clinics handling sensitive data subject to foreign-access risk under the US CLOUD Act.

The platform uses EUDI-native key derivation through the NL-Wallet and eIDAS 2.0 hardware-backed keys, meaning encryption keys are derived locally and SovCore never manages them. A proprietary WebAssembly pipeline handles multi-gigabyte encryption in-browser, while all data is sharded and stored exclusively on sovereign EU infrastructure.

SovCore is not building another SaaS. It is building infrastructure for Europe’s digital autonomy.

Chidinma Egbukichi-Uwaoma is a software engineer and founder with a decade of experience across major tech platforms and early-stage startups. Before SovCore, she was Founding Engineer at Venture Club and previously served as Engineering Manager and Software Engineer at Swantide.

Earlier in her career, she spent three years as a Software Engineer at Pinterest, progressing from an apprenticeship programme to a full engineering role. She began her career as a data systems programmer at Acumen and as a research analyst at the Columbia University Department of Psychiatry. She holds a Bachelor’s degree in Brain and Cognitive Sciences from MIT and a Master’s degree in Public Health from Columbia University.

🔓 Investor Lens:

SovCore addresses a structurally urgent problem: the legal liability created by the US CLOUD Act for European enterprises. With a technically differentiated, zero-knowledge architecture built on the EU’s emerging eIDAS 2.0 digital identity stack, and Chidinma’s rare combination of MIT and Columbia education, Pinterest engineering experience, and founding-level startup background, SovCore is positioned to sell into risk-averse law firms and clinics while building a genuinely defensible infrastructure company.
